31 Mar Port Royal Gumbo – Recipes from the Galleys of Port Royal*

1 c. chopped onion
1 c. chopped celery
1 c. chopped green pepper
2 cloves of garlic
3 c. chicken broth
1 can whole tomatoes
1 pkg. frozen sliced okra
1 bay leaf
1 tsp. Tabasco pepper sauce
¾ lb. cooked chicken
½ lb. deveined shrimp
3 c. cooked rice
In large saucepot, heat oil; add flour and cook on low heat, stirring often, until roux turns dark brown. Add onions, celery, green pepper, and garlic. Cook until tender; add chicken broth, a little at a time. Stir in tomatoes and okra, bay leaf and Tabasco; bring to boil. Add chicken and shrimp and cook 5 minutes. Yvonne Butler
